Can you believe this page?! It's Hello Kitty Librarian!!! Holy smokes! It combines so much in my life...if I could just have her hold a Bundt cake....

Huge thanks to my friend-with-a-cool-name, Mary of Popsicles and Sandy Feet for sending me a photo of this book "What Will I Be A to Z?" by Higashi Glaser from her son's preschool library. The book is out-of-print (ISBN: 978-0810945951) and I picked it up on Amazon for $.99! I'm going to frame this page.

Thanks SOOOO much for celebrating National Library Week with me! Whoo hoo! I loved all your comments about your library. We are facing some tough times, and library staff appreciates your support! Some comments this week:

- I always feel at peace when I am in the library, kind of like I do when I cook, everything just kind of melts away! (Emily)

Today is the last day of National Library Week on the Food Librarian blog! (Sure, NLW actually goes til Saturday, but I gotta rest!)

Thanks for all your nice comments about libraries! They are really inspiring. We are all facing tough times, and it is great to hear that you appreciate your local library. Did you know that one easy way to support your library is by Going. To. The. Library. People love statistics, and high circulation and visits to the library really say a lot. So, please visit your library and check it out (get that pun? Yeah, library humor ain't so great...I'll stick to baking.)

I made some easy-peasy Chocolate Chip Scones. Most of my baking is done before work; I'm a morning person and wake up at some crazy hour. But, hey, it's morning and I don't have time to fuss. Thus, the Drop Scone. No forming in triangles, just scoop, drop and bake (and take a shower while they bake! :)

Today's library thing is WorldCat and Interlibrary Loan. Sometimes, your local library just doesn't have the book you want. So, here is a suggestion. Look up the book in WorldCat - a global collection of library catalogs. You can see if a nearby library has the item...perhaps it is worth the drive. If not, look into your library's Inter Library Loan (ILL) program. ILL is a worldwide system of borrowing books from other libraries. You start the process at your local library (there is usually a nominal fee). Even if your local library has a small collection, ILL can bring you books from all over the world!

Recipe:
Chocolate Chip Drop Scones

Adapted from Bon Appétit, December 2000
Original recipe yields 6 triangle scones. I got 18 small drop scones.

2 cups unbleached all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, diced
1 teaspoon (packed) grated lemon peel (I skipped this)
3/4 cup miniature semisweet chocolate chips
3/4 cup chilled buttermilk
1 large egg yolk
1 teaspoon vanilla extract
Glaze: Milk and 2 T sugar

1. Preheat oven to 400 degrees.
2. Line with Silpat or parchment two baking sheets.
3. In a large bowl, mix together flour, sugar, baking powder, baking soda and salt.
4. In a small mixing bowl or your measuring cup, blend together buttermilk, egg yolk and vanilla. Set aside.
4. Cut up cold butter into small pieces and add to the flour mixture. (If you are adding the lemon zest, add here). Using your fingertips, rub in butter until the mixture is sandy or like rice grains.
5. Mix in the mini chocolate chips
6. Pour buttermilk mixture over the flour mixture and mix until dough comes together. Do not overmix. Dough will be moist and soft.
7. If you want to make triangle scones, gather the dough and press out on floured surface into an 8-inch round. Cut into 6 wedges.
8. If you want to make drop scones, use a scooper to scoop dough onto lined baking sheets.
9. Brush tops of scones with milk and sprinkle with sugar.
10. Bake at 400 degrees for 18-20 minutes until golden brown. (Mine were small so they baked in 18 minutes).

Whoo Hoo! It's Day 4 of National Library Week!

Today, it's a double duty post. I'm in the Martha Stewart Cupcake Club, and this month, Jess (super fun ex-pat California girl living in Connecticut) of Cookbook Habit selected Jumbo Cream-Filled Chocolate Cupcakes of Martha's fantastic book: Martha Stewart's Cupcake Book

These were easy to make. A basic sour cream chocolate cupcake filled with...wait for it...Marshmallow Creme or Marshmallow Fluff. I have never purchased this product; it's kinda strange. You are supposed to make these cupcakes in Jumbo cupcake cups but I feel that is way too much Marshmallow Creme for one person. So, I made 1/2 a batch of regular cupcakes and got 16 cupcakes.

A quick squiggle of marshmallow creme (see here) is supposed to top the cupcake but where is the chocolate topping? If these are supposed to be Hostess Cupcake wannabes, they need a chocolate topping, right? I topped mine with chocolate ganache and heavy cream/powdered sugar squiggle icing.

I also didn't add butter to the fluff. I just threw it in a piping bag, cut out a little bit of the top (I found a paring knife to cut out a cone works best), and piped in the fluff.

Each day, I'm talking about one library thing (um, it is called Library Week). Our public library often gets the question, "Can you tell me what I've checked out this past year?" Privacy is a big deal at the library so we purge borrower information when a book is returned. So, how to remember what you read? You may want to sign-up with a free online program that helps you keep track of your books. You can even post a badge on your blog to show what you're reading. Here are three companies to check out: Shelfari, Library Thing, Good Reads.

National Library Week Day 3: Coffee Jello & Disney Giveaway

Yeah, this isn't the stuff you get in the hospital.

It's National Library Week! This is the 2nd annual celebration on my blog. As I say, I'm putting the Librarian in the Food Librarian!

Last month, I had dinner at a Vietnamese restaurant, and my friend ordered Vietnamese coffee - a combo of espresso and condensed milk. I love Vietnamese coffee, but I can't handle caffeine so I just had a sip. I knew I wanted to make it in Jello form. Right away.

The Japanese also make a coffee jello - sweetened black coffee gelatin cubes or cups. Often, it is served with cream. But I wanted mine all mixed together so it can be served easy-to-eat finger jello style.

I made this with Starbucks VIA (Starbuck's new instant coffee), Knox unflavored gelatin, and sweetened condensed milk. Because the milk is sweetened, I didn't add any additional sugar.

This was a CROWD favorite at the library. My co-workers love all coffee and mocha desserts. I brought it out at 3 pm and it was a perfect pick-me-up! Of course, you can make them with decaffeinated coffee...but the coffee drinkers will just look at you weird and wonder why anyone would do that.

All this week, I'm highlighting a library thing (usually a public library thing b/c that's my gig). Today, it's Downloadable Media. My favorite provider is OverDrive. You can download audiobooks and eBooks to your home computer and transfer them to a portable device (such as MP3, iPod, Sony Reader, Barnes & Noble Nook). Remember that crazy 30 days of Bundts I did in November? I wouldn't have made it through all that baking and blogging without downloadable audiobooks. Downloadable media is free, easy to use and there are never any overdue fines. See if your library subscribes to OverDrive on their website.

Coffee Jello / Coffee Gelatin
1/2 c cold water
2 cups strong coffee, hot. I used two packages of Starbucks Via. The coffee needs to be strong. This isn't the time for Sanka instant. :)
1 can (14 oz) sweetened condensed milk (not evaporated milk)
3 packages of Knox unflavored gelatin

1. Place 1/2 c cold water in a bowl.
2. Sprinkle 3 unflavored gelatin packets over the water. Let sit until the gelatin blooms, about 10 minutes.
3. Stir in the hot coffee and mix until the gelatin is completely dissolved.
4. Stir in the can of sweetened condensed milk.
5. Pour into glass pan. Thickness of finished jello depends on the size of the pan. I used a 7 x 11 pan but a 9 x 13 pan will give you thinner pieces and an 8 x 8 pan will give you thicker pieces.

Note: The combo of coffee and sweetened condensed milk is inspired by Vietnamese coffee. You can probably adapt this to use coffee or espresso, cream and sugar (be sure to dissolve the sugar in the hot coffee and gelatin). I find that 1 packet of unflavored gelatin will firm up 1 1/2 cups of liquid to finger jello "strength" (according to David Lebovitz's "How to Use Gelatin" post you can mold 2 cups with one envelope - but I feel finger jello needs to be stronger).

National Library Week Day 2: Hot Milk Sponge Cake and Loaf Pan Giveaway

Whoo Hoo! It's Day 2 of National Library Week! Yes, the Food Librarian is bringin' out the Librarian this week. Thanks for your sweet comments about your library...and I always seem to remind someone to return an overdue book! :)

In the baking group, Tuesdays with Dorie, we are making our way through the Dorie Greenspan book, Baking: From My Home to Yours. It is fun and yummy. For the last couple holiday seasons, we've had an optional gift exchange. This year, my "Secret Santa" was Laurie, the founder of TWD! Yes, all you TWD bakers can be jealous! Serious, how cool is that?

And Laurie gave me the best gift ever! An out-of-print, 1929 cookbook Any One Can Bake compiled by the Educational Department of the Royal Baking Powder Company, New York. As you can imagine, everything has Royal Baking Powder in it! :) The recipes are simple and provide a glimpse of the times. Shortening is in a lot of the dishes...it was cheaper than butter and who knew anything about trans-fats in 1929!

Since the lady in these 1929 photos doesn't have a Kitchen Aid mixer, I figure I shouldn't use one either. So, I pulled out my big whisk and went to town.

This involves beating egg yolks, adding sugar, and pouring in hot milk. Lemon juice and zest add a light flavor. Egg whites are whipped up and folded into the batter. Finally, a bit of flour and baking powder are added.

Topped with macerated strawberries (just some strawberries and sugar but I'm sure some liquor would be nice too). I think the Librarian Action Figure would like that too. :)

And that brings us to today's library thing...Book Sales! Libraries often get donated books from the community (thank you donors!) and weed books in our collection to make room for new titles. Most libraries have used book sales where the public can snap up some bargains. The money goes back to support the library's collection and programs. Ask about used book sales at your local library! You never know what you can find...perhaps a 1929 cookbook!

Hot Milk Sponge Cake
Adapted from Any one can bake, Royal Baking Powder Co., 1929 (page 55 with additional instructions on pages 46-47)

4 eggs, separated and room temp
1 c sugar
6 T hot milk (1/4 cup plus 2 T)
1 T lemon juice
Zest of 1/2 lemon
1 c all-purpose flour
1/4 t salt
1 1/2 t baking powder (of course, this book published by the Royal Baking Powder company suggests their own brand!)

These are my instructions for using a whisk. You can use your whisk attachment on the KitchenAid as well...but you won't feel like a 1929 home economist doing that! :)

Preheat oven to 350 degrees.
1. Separate eggs (it is easier to separate the eggs when cold, but bring ingredients to room temp before using).
2. Beat egg yolks with whisk until thick and light colored. Add half the sugar, beat together until light and fluffy.
3. Slowly whisk in the hot milk, then the remainder of the sugar.
4. Add the lemon and lemon zest.
5. In a separate bowl, quickly whip the egg whites until light, soft peaks.
6. Fold HALF the egg whites into the egg yolk mixture.
7. Carefully, but quickly, fold in the sifted flour mixture.
8. Fold in the remaining egg whites.
9. Pour into ungreased tube pan.
10. Bake for 45 minutes at 350. Remove from oven and cool upside down (like an angel food cake).
11. I served mine with sweetened strawberries.

I know you are probably reading this on your own computer, but did you know that nearly 1/3 of the U.S. population over the age of 14 used the library's internet computers? As more companies only allow online applications (even if the job doesn't use computers), free internet access at the public library is one of our essential services.

I hope you take some time out this week to celebrate libraries and the library staff. Libraries are special places where you can find a book, DVD, music, story time, job announcements, research assistance, and free internet access. Stop by to enjoy a seminar, join a knitting group, or get help learning about your genealogy.

Of course I start the week with a Bundt. No. Big. Surprise. I now live close to a Bristol Farms (California grocery store that is really pretty and really expensive). Last winter I picked up their free magazine. And what caught my eye? Oh, yes, the Bundt on the Cover.

This bundt is easy to make and uses ricotta cheese. It is the first time I'm using ricotta in baking, and not a lasagna.

Recipe: Orange-Ricotta Pound Cake with Marmalade Glaze

Adapted from Lauren Chattman's book, Cake Keeper Cakes: 100 Simple Recipes for Extraordinary Bundt Cakes, Pound Cakes, Snacking Cakes and Other Good-To-The-Last-Crumb Treats

In the headnote, Laren Chattman says grapefruit zest and marmalade can be substituted
Cake:
3 cups unbleached all-purpose flour
1 1/2 t baking powder
1/2 t baking soda
1 t salt
3/4 cup (1 1/2 sticks) unsalted butter, room temp
1 1/2 cups sugar
1 1/2 cups whole-milk ricotta cheese
3 large eggs, room temp
1/4 cup fresh orange juice (for me, that was one orange)
1 1/2 t vanilla extract
1 1/2 t orange zest (I used the zest of two oranges)

Glaze:
1/2 c orange marmalade (I bought mine at Trader Joe's)
2 t water

1. Preheat oven to 325 degrees. Prep a 12-cup Bundt pan. (This is a big cake...Bristol Farm's magazine used the Bavaria Nordic Ware Bundt pan but that is a 10-cup pan. I didn't want to bake it in two pans so I used the original, classic 12-cup Bundt.)
2. Combine together: flour, baking powder and soda, and salt in a bowl. Set aside.
3. With the paddle attachment, cream together the butter and sugar at medium-high until light and fluffy (about 3 minutes).
4. Add ricotta cheese and beat until smooth.
5. Add the eggs, one at a time, mixing well. Scrap down sides of batter after each egg.
6. Beat in orange juice, vanilla and orange zest.
7. With mixer on low, slowly add the flour mixture. Scrap down the sides a few times. After the last addition, mix for 30 seconds on medium speed...but don't overmix.
8. Pour batter into greased and floured (I use Pam with Flour spray) Bundt pan. Bake on the middle rack until golden brown and a toothpick comes out clean. It took my cake 55 minutes at 325 degrees. The instructions say "about 1 hour and 10 minutes" so please check early.
9. Cool cake in the pan for 15 minutes than depan onto a cooling rack. Cool completely before applying glaze.
10. For the glaze, heat the marmalade and water in a saucepan until everything is liquid. Brush it over the cake - I used a brush to coat the entire cake, but you can also just place on top and let it run down the sides. Let glaze cool before serving.
11. Like her book suggests, keep the cake in the Cake Keeper! Since I bring mine to work, it is gone by the afternoon.
