Martha Stewart Texas Sheet Cake

Martha Stewart Texas Sheet Cake
Martha Stewart Texas Sheet Cake

Texas Sheet Cake is one of my favorite treats to make. It comes together SO FAST. You can get it done in a jiffy and it's always a winner with friends and family.

This recipe is from Martha Stewart's book "Martha's American Food: A Celebration of Our Nation's Most Treasured Dishes, from Coast to Coast". The recipe is available online with Los Angeles Magazine.

I've made a few Texas Sheet Cakes in the past. Pioneer Woman has a great one. It is thinner because you use a half-sheet pan, but you can get it done start-to-finish in less than an hour. I make her recipe often. I've also made the Better Homes & Garden version.

Martha Stewart Texas Sheet Cake
Texas Sheet Cake comes together quickly because you boil the butter, water and cocoa together for the batter, and then boil the icing or frosting while the cake is baking in the oven. Instead of waiting for the cake to cool like most other frostings, with Texas Sheet Cake, you pour the frosting on a WARM cake. Easy peasy, no?

Martha Stewart Texas Sheet Cake
I found the cake really yummy. I like baking it in a 9 x 13 pan (compared to the larger half-sheet pan) so you can make it a bit taller - more like a sheet cake instead of brownies. The baking time was very different than the recipe (recipe: 12-14 minutes, me: 21 minutes). Also, I prefer the Pioneer Woman's icing. Martha's recipe has heavy cream in the frosting - while yummy, sometimes I don't have cream in the house.

Recipe from: Martha's American Food: A Celebration of Our Nation's Most Treasured Dishes, from Coast to Coast

Texas Sheet Cake
1 cup (2 sticks) unsalted butter
2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
¾ teaspoon coarse salt
½ teaspoon ground cinnamon
¼ cup unsweetened cocoa powder (I used Hershey's)
1 cup water
2 large eggs, lightly beaten
½ cup buttermilk
1 teaspoon pure vanilla extract
Boiled Chocolate Icing (see below)
1 ¼ cups coarsely chopped toasted pecans (I omitted the nuts)

1. Preheat oven to 375°F. Lightly butter a 9-by-13-inch baking pan. Whisk together flour, sugar, baking soda, salt, and cinnamon in a large bowl.
2. Melt butter in a saucepan over medium-low; whisk in cocoa, then the water. Raise heat and bring to a boil, whisking occasionally. Pour over flour mixture and stir until thoroughly combined. Stir in eggs, buttermilk, and vanilla.
3. Pour batter into prepared pan and tap firmly on counter to release air bubbles. Bake until sides pull away from edges of pan and a cake tester inserted in center comes out clean, 12 to 14 minutes (Mine took 21 minutes to bake). Transfer pan to a wire rack and pour icing over cake while still warm. (Sprinkle nuts on top, if using). Let cool before slicing into squares and serving.

Boiled Chocolate Icing

½ cup (1 stick) unsalted butter
¼ cup unsweetened cocoa powder
½ cup heavy cream
2 teaspoons pure vanilla extract
2 cups confectioners’ sugar (I suggest sifting the powdered sugar)

Bring butter, cocoa, and cream to a boil in a small saucepan, stirring occasionally. Remove from heat, and stir in vanilla and confectioners’ sugar. Use while still warm. Pour over warm cake.

Strawberry Shortcake Cookies - Martha Stewart

Strawberry Shortcake Cookies
Strawberry Shortcake Cookies

It's now the season where you can get a flat of strawberries at the farmer's market for $8-10. Awesome. I usually pick up a three pack every week. Love strawberries in yogurt, just plain and in dessert. These are Strawberry Shortcake Cookies from Martha Stewart.

Strawberry Shortcake Cookies
These cookies are supposed to be like a traveling strawberry shortcake. Um, I'd rather have a real strawberry shortcake. They were okay, but they didn't rock my world.

If you want to bake with strawberries, I would go for Joy the Baker's Strawberry Upside Down cake or Martha Stewart's Strawberry Cake in a pie pan.

Strawberry Shortcake Cookies

Recipe:
From Martha Stewart
Martha Stewart Living, June 2009

12 ounces strawberries, hulled and cut into 1/4-inch dice (2 cups)
1 teaspoon fresh lemon juice
1/2 cup plus 1 tablespoon granulated sugar, divided
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
3 ounces (6 tablespoons, 3/4 of a stick) cold unsalted butter, cut into small pieces
2/3 cup heavy cream
Sanding sugar, for sprinkling

Preheat oven to 375 degrees F.
Combine the cut strawberries, lemon juice, and 2 tablespoons granulated sugar.
Whisk together flour, baking powder, salt, and remaining 7 tablespoons granulated sugar in a large bowl.
Cut in the butter with a pastry cutter, or rub in with your fingers, until mixture resembles coarse crumbs.
Stir in cream until dough starts to come together, then stir in strawberry mixture.
Drop dough onto baking sheets lined with parchment (I used a small cookie scoop).
Sprinkle with sanding sugar, and bake until golden brown, about 20-25 minutes.
Transfer to a wire rack, and let cool.
These cookies don't keep. Cookies are best served immediately, but can be stored in an airtight container at room temperature for up to 1 day.

Ultimate Streusel Bundt Cake
I Like Big Bundts - Day #18

Hellllloooo! Today's Day #18 of my third I Like Big Bundts - 30 days of Bundt cakes!

Martha Stewart has a baking show on Hallmark Channel and she made this monster bundt cake - The Ultimate Streusel Bundt Cake! It has two big layers of streusel and a moist cake.

All these bundts are leading up to National Bundt Day! Submission info can be found here. Bake a bundt for National Bundt Day on November 15th! Then submit a photo or blog post by November 24, 2011 and I'll send you a 1 1/4" button for baking along with me!

This makes hella streusel with pecans. In fact, when I make this again, I might make 1/2 the streusel and put only one layer of streusel in the middle. Because this has a layer on the "top" (in the pan) that becomes the "bottom" when inverted, it was a little different than other layered bundts (such as Day #6: Maida Heatter's Budapest Coffee Cake Bundt).

Topped with powdered sugar and milk glaze, this cake is perfect for Sunday brunch, Monday breakfast, Tuesday lunch, and Wednesday tea time. :) - mary the food librarian

Apple Spice Bundt - Day #9 of Food Librarian's I Like Big Bundts 3

I Like Big Bundts - Day #9

An apple a day. Or at least an Apple Bundt a Day.

It's Day #9 of my I Like Big Bundts extravaganza - 30 days of bundts leading up to National Bundt Day! Thanks for following along. I love, love hearing that you are planning to make a bundt for National Bundt Day (November 15th). What are you planning on making? Remember, I'm doing a round-up and sending you a special something if you bake along with me.

Apple Spice Bundt Cake- I Like Big Bundts 2011
As you know, I bring in my baked goods to the library and that has established a lot of goodwill! :) I'm very lucky to work with a great group of people.

The other day, I was writing my To Do list: Apples, buttermilk, Brita filter, Dog toy.

Then, magically, my co-worker Ruth Ann came up to me with a 3-pound bag of apples from Oak Glen (near Los Angeles). Amazing!

I immediately went back to my list and wrote "George Clooney."

Sadly, he hasn't popped by the library yet. But the apples were put to good use.

Apple Spice Bundt Cake- I Like Big Bundts 2011
This is a Martha Stewart recipe. I've made it before and it is a great Bundt. Definitely something to keep in your recipe book. It is made with veg oil and no butter so the cake is dairy-free (dairy in the caramel sauce).

Apple Spice Bundt
A caramel sauce is poured over the top. I didn't let it go very long because last time I made this, I let it go too long and ended up with a crazy tough caramel that would have ripped out fillings. So, the sauce should be somewhere in-between. Martha's website also has a video of Dorothy Mae Brown making the cake on her show. She's a sweetie.

I'm keeping "George Clooney" on my list...just in case...

Peach Buckle - Martha Stewart

Peach Buckle
Peach Buckle
Fruit in baked goods. I'm home.

I picked up some peaches at the farmers market and peeled three large ones for this delicious buckle.
Peach Buckle collage 1
Easy peasy. Fruit, batter, and a topping of cinnamon sugar and sliced almonds. Since one of my co-workers doesn't eat nuts (but not allergic) I sprinkled the nuts over 1/2 the buckle.

Peach Buckle
This is a recipe from Martha Stewart...she makes it in a iron skillet. That makes are great presentation. However, I popped mine in a 9" square pan because it is easier to cut into squares to serve at the library.

Strawberry Cake - Martha Stewart

Strawberry Cake
Strawberry Cake

When you get pick up a pint of strawberries for less than the cost of a latte, make this cake. Baked up in a pie shell, it is perfect for breakfast or tea. And you know it is one of my favorites because it has (a) no frosting (b) has fruit and (c) quick and easy!!!

Strawberry Cake
I walked through the library right before it opened...it was still warm and totally fragrant...staff actually followed me to the "buffet" (the countertop where I put all the treats).

A super easy batter that is topped with slices of strawberries. I like that it is baked in a pie pan...it's pie cake!

Meyer Lemon Pound Cake Bundt - Lemon Week 2011

Meyer Lemon Pound Cake Bundt
Meyer Lemon Pound Cake Bundt

It's Day 3 of Lemon Week! Hello. My name is Mary and you may have heard...I Like Big Bundts. So, of course we had to have a Bundt cake. But this one is a Meyer Lemon Bundt!

Meyer Lemon Week 2011
Friends Mary of Popsicles and Sandy Feet and Jenn of JustJenn are celebrating lemons this week.

Meyer Lemon Pound Cake Bundt
I made Martha Stewart's recipe for a pound cake but made 1/2 the recipe. I think I baked it a bit too long or over-mixed the ingredients because it was a bit dry. I'll have to try the recipe again!

Meyer Lemon Pound Cake Bundt
I baked it in the pretty Bavarian bundt pan. I really like this bundt pan...just be sure to spray the heck out of it...them curves? Very sexy but lots of opportunities for stickage.

Meyer Lemon Pound Cake Bundt
Be sure to check out JustJenn and the East Coast Mary recipes too. You don't have an excuse not to make something lemony! :)

Recipe:
Martha Stewart's Meyer Lemon Pound Cake
I made 1/2 the recipe and baked it in 10-cup Bundt cake pan. I baked it for 60 minutes but found it a bit dry so I would check it much earlier next time.

Apple Bundt with Caramel Sauce - Day #7 of I Like Big Bundts

Apple Spice Bundt - I Like Big Bundts
You know, I Like Big Bundts. And I Love this Bundt!

Granny smith apples, cinnamon and caramel. Perfection. I've made it before and it is yummy! I think cinnamon is my favorite spice. Who would of thought bark would be so tasty?

Apple Spice Bundt - I Like Big Bundts
This time, I bought the caramel sauce to top the Bundt. The caramel sauce is easy to make (just don't take it too far), but I didn't know what I would do with the leftover evaporated milk. If I'm crazy enough to make 30 darn Bundts, please let me take this shortcut. :)

Apple Spice Bundt - I Like Big Bundts Apple Spice Bundt - I Like Big Bundts
You really need to put something on it...caramel sauce or powdered sugar. Fruit bundts often look a little "plaguey" on their own! :)

Apple Spice Bundt - I Like Big Bundts
Important: This recipe says to bake for 75-90 minutes. But I checked mine at 60 minutes and it was done. So, please check at 1 hour and see how things are coming along!

Come back tomorrow for another Bundt! I'm really excited to hear that some of your are going to make Bundts on National Bundt Day (November 15th). Whoo hoo!

Chocolate Espresso Cupcakes & Mascarpone Whipped Cream Frosting

Chocolate Espresso Cupcakes with Mascarpone Whipped Cream Frosting
Chocolate Espresso Cupcakes with Mascarpone Whipped Cream Frosting

Sweet Valley High books started in 1983. I was 13 years old and made my mom buy countless books for me. Yeah, I've always been into chick lit and the RomCom. Anyway, in these novels, there is often the, as I call it, "electric moment." You know, when the girl sees the guy and it is electrifying. Or when their hands touch and she can feel the deep connection.

Chocolate Espresso Cupcakes with Mascarpone Whipped Cream Frosting
Well, I had that deep emotional connection. No, not with the Sweet Valley High guy, but with Mascarpone Whipped Cream Frosting.

We celebrated two birthdays at the library earlier this week and I made some mini cupcakes. The cupcake is Martha Stewart's One Bowl Chocolate cake with added espresso, and JustJenn's Mascarpone Whipped Cream Frosting.

Chocolate Espresso Cupcakes with Mascarpone Whipped Cream Frosting
The Mascarpone Frosting was divine. I'm not a fan of super sweet, buttery frosting, so this was heaven. It is light, slightly sweet and did I mention light? One of the birthday people said she could eat a whole bowl of the frosting. It is dangerous and delicious. Make it. You'll find that electric moment too.

Chocolate Espresso Cupcakes with Mascarpone Whipped Cream Frosting

Recipe:
1. Martha Stewart's One-Bowl Chocolate Cupcake - Make the recipe here, but add 1 T instant espresso powder (I use this brand) to the warm water to dissolve. It isn't overpowering, but it brings out the chocolate flavor. I baked the mini cupcakes for 10 minutes.

2. justJENN recipe for Mascarpone Frosting. Make this. Save some for the cupcakes and grab a big spoon and eat the rest.

National Library Week Day 4: Jumbo Cream-Filled Chocolate Cupcakes and Cupcake Liner Giveaway

Jumbo Cream-Filled Chocolate Cupcakes
Jumbo Cream-Filled Chocolate Cupcakes

Whoo Hoo! It's Day 4 of National Library Week!

Today, it's a double duty post. I'm in the Martha Stewart Cupcake Club, and this month, Jess (super fun ex-pat California girl living in Connecticut) of Cookbook Habit selected Jumbo Cream-Filled Chocolate Cupcakes of Martha's fantastic book: Martha Stewart's Cupcake Book

MS Cupcakes Club

Jumbo Cream-Filled Chocolate Cupcakes Jumbo Cream-Filled Chocolate Cupcakes
These were easy to make. A basic sour cream chocolate cupcake filled with...wait for it...Marshmallow Creme or Marshmallow Fluff. I have never purchased this product; it's kinda strange. You are supposed to make these cupcakes in Jumbo cupcake cups but I feel that is way too much Marshmallow Creme for one person. So, I made 1/2 a batch of regular cupcakes and got 16 cupcakes.

Jumbo Cream-Filled Chocolate Cupcakes Jumbo Cream-Filled Chocolate Cupcakes
A quick squiggle of marshmallow creme (see here) is supposed to top the cupcake but where is the chocolate topping? If these are supposed to be Hostess Cupcake wannabes, they need a chocolate topping, right? I topped mine with chocolate ganache and heavy cream/powdered sugar squiggle icing.

Jumbo Cream-Filled Chocolate Cupcakes
I also didn't add butter to the fluff. I just threw it in a piping bag, cut out a little bit of the top (I found a paring knife to cut out a cone works best), and piped in the fluff.

Jumbo Cream-Filled Chocolate Cupcakes
The library staff found this cupcake superior to a Hostess Cupcake and way cute!

The Librarian Action Figure picks out her cupcake.

Each day, I'm talking about one library thing (um, it is called Library Week). Our public library often gets the question, "Can you tell me what I've checked out this past year?" Privacy is a big deal at the library so we purge borrower information when a book is returned. So, how to remember what you read? You may want to sign-up with a free online program that helps you keep track of your books. You can even post a badge on your blog to show what you're reading. Here are three companies to check out: Shelfari, Library Thing, Good Reads.

National Library Week 2010 Giveaway - Tulip Cupcake Liners
I'm having five days of giveaway during National Library Wee!

To celebrate Day 4 of National Library Week, I'm giving away the following to one lucky winner:
A boatload of cupcake liners

These orange, yellow and green tulip cupcake liners are awesome. So pretty. I'm giving away some of each color (big and mini)...probably 200 liners or so (purchased at Surfas in Los Angeles). You'll be making lots of tulip cupcakes!

To enter the Day 4 Giveaway, simply leave a comment below (one entry per person) and I'll pick the winner from a hat (aka Random). Deadline for all contests: Monday, April 19, 2010 at midnight PDT. If your comment isn't linked to a blog where I can find you, please leave your email. Shipping to U.S. addresses only. Librarian Action Figure not included.

Also, don't forget to enter the Day 1 Giveaway: Cookbook and Chef Post-its, Day 2 Giveaway: Loaf Pans, and Day 3 Giveaway: Disney Stuff.
