Do you read The Kitchn? I love the website. They always have helpful tips, recipes and just plain pretty things. I had a few pears on my counter and found Emma Christensen's recipe for Spiced Pear Muffins.

Spiced Pear Muffins
I used lovely bartlett pears from Ha's Farms. They are a farmer's market vendor in Hollywood, Torrance, Palos Verdes and a few other places. They have wonderful apples and even better pears. Unlike other muffin recipes that are more "quick bread" (liquid and dry ingredients combine), this recipe creams the butter and sugar together - more like a cake batter. As you can see, the batter is thick.

The original recipe uses a mix of whole wheat flour and all-purpose flour. I didn't have any whole wheat flour in the house so I used all a-p flour. Also, I made these quite early in the morning and completely forgot to put cinnamon-sugar on top of the muffins...as well as the ground ginger. It was too early for me. Oops.

I dropped these off, along with some cookies, at my former workplace. Although I enjoy my new place, I was at the old library for five years and miss the folks. I miss hearing about K's beautiful granddaughter, E's smart toddler who never has a bad hair day, J's travels around the globe, V's gardening and her intelligent sons, P's son who is a fire fighter explorer (I wish I could join :), F's March Madness (UCLA Bruins all the way), and H's discussion of White Collar and all things George Clooney.

These were a hit at the library. I hope you make some for your friends and family - especially those that you don't see everyday.

1/2 cup (4 oz) light brown sugar, packed
1/4 cup (2 oz) white sugar
1 stick (4 oz) unsalted butter, softened
2 eggs, room temperature
1 teaspoon vanilla extract
2 cups (10 oz) all-purpose flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup (4 oz) milk (I used whole milk)
2 to 2 1/2 cups pears, unpeeled and diced small (2 medium-sized pears, about 11 oz whole) (I used two Bartlet pears from Ha's Farm)
Cinnamon-and-Sugar for sprinkling on top (You can make a mix of 1/4 cup white sugar and 1 Tablespoon cinnamon, but only sprinkle a bit of that on the muffin and save the rest for cinnamon toast).

Preheat oven to 425°F. Prepare 12-muffin cup pan.

In a medium bowl, whisk together the flour, baking powder, spices, and salt. Set aside.

In a stand mixer with a paddle attachment, cream together the sugars and butter until fluffy. Add eggs one at at time and beat for 1 minute after each egg. Add the vanilla extract and mix. Scrape down side of bowl.

With the mixer on low speed, alternate adding the flour mixture and milk, starting and ending with the flour until just combined. Don't overmix! Fold pears into the batter.

Fill muffin cups. I use an ice cream disher. I didn't fill mine as high as The Kitchn and got 15 muffins, but you can fill them full to get 12 bigger muffins. Sprinkle the tops with cinnamon and sugar.

Place the muffins in the oven and immediately turn down the heat to 400°F (don't miss this part!) Bake for 20-25 minutes until the tops are cracked and a toothpick comes out clean.

It's Thursday and I have Friday off because it's Veterans Day! Thank you Veterans for your service!

Today is Day #25 of I Like Big Bundts 3! Woo hoo! We have a fall bundt today - the ApplePearSauce Bundt made with homemade ApplePearSauce.

OMG. Why hasn't anyone ever told me how easy homemade applesauce is to make? In less than an hour I can go from apples to delicious applesauce? Shut up! This is fantastic. I used apple and pears and just added a tiny bit of brown sugar. I didn't add cinnamon because I was going to use it in the cake...but added cinnamon to the leftovers! YUM!

Last year, fine group of Canadian Information Professionals (Heather, Joanne, Genevieve and Shane) had a Bundt Coffee Break Party! Heck yay...information professional know how to rock Bundt Day! ApplePearSauce Bundt Cake - I Like Big Bundts 2011
I think my favorite is Bundt Hard! :) I know this little project is crazy and you probably think I'm zany, but my one wish is that you bake something and share it. Nothing like flour, butter and sugar to bring peeps together. I LOVE that my twitter feed has comments like "I bought my Bundt pan today!" or "I'm making a Bundt cake right now!" because I know you are probably not going to eat it by yourself (although you totally can, no judgement here), but that you will probably share this with someone and take time out of our crazy days to enjoy each other's company. Sweet.

It's Day #6 of I Like Big Bundts! Today, it's a fruit Bundt!

Reader Corinne told me she made this Smitten Kitchen Pear Bread recipe into a Bundt. Since it's pear season, I wanted to try this! I just love pears...Bartlett, Bosc, Anjou. What's your favorite?

And the best part, this is one big muffin. No Kitchen Aid. Just two big bowls. Easy Peasy.

I made a quick powdered sugar and heavy cream glaze.

Grated pears give the Bundt sweetness and flavor. I needed two pears to equal 2 cups grated.

Adapted from Smitten Kitchen who adapted it from Nancy McDermott’s Southern Cakes, which attributes it to one Cornelia Walker. Smitten Kitchen makes it in a tube pan. See her post here.

3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1 tablespoon ground cinnamon
1 cup chopped walnuts (optional) (I did not include them)
3/4 cup butter, softened, or 3/4 cup vegetable oil (I used veg oil)
3 eggs, lightly beaten
2 cups sugar
2 to 4 pears firm, ripe pears (for 2 cups of grated pears) (I needed 2 pears to make two cups of pears)
2 teaspoons vanilla extract

1. Preheat oven to 350°F and prep Bundt pan. (I use Pam with Flour spray)
2. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a large mixing bowl. (If you’re using nuts, scoop out about 1/4 cup of the flour mixture and combine it in a small bowl with the chopped walnuts, stirring and tossing to coat the nuts with the flour.)
3. In a medium bowl, combine the butter or oil, eggs, sugar, and vanilla, and stir to mix everything well. Peel and core pears, then grate them (two cups total). Put pears and nuts (if using) into the wet mixture.
4. Scrape the pear mixture into the flour mixture and stir just until the flour disappears and the batter is evenly moistened.
5. Pour batter into pan and bake for 50 minutes, or until toothpick comes out clean.
6. Cool Bundt on a wire rack for 10 minutes then depan to cool completely.
7. I made a glaze of powdered sugar and heavy cream to drizzle on top the cooled cake.
