Thin Mint Muffins
These muffins are based on my favorite chocolate muffins - from King Arthur Flour. Instead of chocolate chips, I chopped up a sleeve of Thin Mints and added a few Andes Mint Chips too.

Girl Scouts 2013My UCLA college roommate, Agnes has two beautiful daughters, Lucia & Julia. They are in the Girl Scouts and each year I put out the cookie order form at work. To be honest, I don't know why anyone orders anything but Thin Mints... especially those Samoas covered with coconut (yuck!)

Over the years, I've tried to incorporate Thin Mints into favorite baked goods. You know, baking with seasonal ingredients and all. This year, I ordered six boxes of Thin Mints for myself. I'm not sure how long they'll last though. There have been incidents that require Thin Mint assistance: a bad week, nothing in the fridge to eat, and actors leaving Downton Abbey which translates into sad, sad endings (total thin mint worthy).

So, what have you been up to lately? Obviously, I haven't been blogging too much... I've been watching some TV. What's on your DVR? I have:

The Following with Kevin Bacon on Fox. Holy smokes. This show is fantastic but scares the beeejesuzzz out of me. I can't watch it on Monday night because then I can't sleep. I have to watch it on the weekend during the day. With the doors locked.

The Good Wife. CBS. Still a good show. Liked Julianna Margulies since her Nurse Carol Hathaway days on ER.

Elementary. CBS. Took some episodes to warm up to this one, but it's a good one to keep me in the Holmes world until the BBC releases more Sherlock.

Southland. TNT. Great cop show...and I like seeing Los Angeles landmarks throughout. :)

House of Cards. Netflix streaming. Damn, this is sooo good. Kevin Spacey is amazing.

Comedies:  The Mindy Project, New Girl, The New Normal

Waiting for more episodes from: White Collar (season just ended), Mad Men (coming back in April), Downton Abbey (if they don't kill off everyone...)

I don't have premium channels on cable so I have to wait and buy Amazon instant videos of Homeland (don't tell me what happens in Season 2 please! :)

Recipe:
Thin Mint Muffins

Adapted from King Arthur Flour's website's: Chocolate Breakfast Muffins with added Thin Mint cookies and Andes Mint Chips.

2/3 cup (2 ounces) Dutch-process cocoa
1 3/4 cups (7 1/4 ounces) King Arthur Unbleached All-Purpose Flour
1 1/4 cups (9 3/8 ounces) light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 sleeve of Girl Scout Thin Mint cookies, chopped (in 2013, that was about 15-16 cookies and equaled about 1 1/4 cups)
1/2 cup Andes Mint Chips
2 eggs
1 cup (8 ounces) milk (I used whole milk)
2 teaspoons vanilla
2 teaspoons vinegar
1/2 cup (4 ounces, 1 stick) butter, melted

Prep: Preheat oven to 400°F. Prep muffin tin (I sprayed mine with Pam with Flour spray).
1. In a large mixing bowl, whisk together the cocoa, flour, sugar, baking powder, baking soda, salt, chopped Thin Mint cookies and Andes mint chips.
2. In a large measuring cup or medium mixing bowl, whisk together the eggs, milk, vanilla and vinegar.
3. Add the wet ingredients, along with the melted butter, to the dry ingredients, stirring to blend, just until combined. Do not mix.
4. Scoop the batter into the prepared muffin tin. King Arthur makes 12 muffins with big tops, but I made them smaller and made 16-18 muffins.
5. Bake the muffins for 18-25 minutes (depending on size), or until a cake tester inserted in the center of a muffin comes out clean. Remove the muffins from the oven, and after 5 minutes remove them from the pan, to cool on a rack.

My friend's daughters were selling Girl Scout cookies. My favorite time of the year! I helped them and left the order form out at work (along with this cute photo of the girls!) and sold 81 boxes of cookies at a couple work places! Um, I may or may not have purchased a bunch of said cookies. You know, supporting youth. I'm all for it.

Thin Mint Scones
I made the scones in the evening and cut them into 16 small squares. I put them on this 1/4 sheet pan and wrapped it tightly with plastic wrap. Then I froze them overnight. In the morning, you can just pop them in the oven (spread out on two 1/2 sheet pans) for a little longer than the recipe's recommended baking time. In my rush, I forgot to put the egg wash and sanding sugar on the scones before baking so your finished scone may look a bit different.

I chopped up less than one sleeve of Thin Mints (about 12-14 cookies). It was a little less than 1 cup...enough to give a Thin Mint taste with a few cookies remaining to eat while they bake! :)

Thin Mint Scones
Adapted from: Cream Scones from the Art and Soul of Baking (page 152). This is a very good book - find it on Amazon or in your library.

2 cups (10 oz) all-purpose flour
1/4 cup (1 3/4 oz) granulated sugar
2 1/2 t baking powder
1/4 t salt
1 stick butter (4 oz) (cold, cut into pieces)
1 cup (8 oz) heavy whipping cream (cold)
3/4-1 c chopped Thin Mint cookies (about 12-14 cookies) (less than 1 sleeve of Thin Mints (2012 box size))

Topping
1 egg, lightly beaten
2 T sanding sugar or granulated sugar

1. Preheat over to 425 degrees
2. Mix together dry ingredients.
3. Using a pastry cutter, two knives or your fingers (I use my fingers), cut in the butter. (The book uses a food processor, but I like to make scones by hand...less to clean up!)
4. Add whipping cream and chocolate chips. Blend together quickly (I use my hands and/or a spatula). Do not overmix.
5. Shape into a round or square.
6. Cut into shapes.
7. Place on parchment or Silpat covered baking sheet. Brush with egg wash. Sprinkle with sugar.
8. Bake for 14-16 minutes (depending on your oven) until golden brown and delicious. I cut my smaller and got 16 scones.

Thin Mint Pancakes - National Pancake Day

March 1st is National Pancake Day (celebrated at IHOP with a free pancake/fundraiser). Next week is Shrove Tuesday or Fat Tuesday and you can make pancakes again. This was done to empty the kitchen of eggs, sugar and cream before Lent.

My friend's daughters were selling Girl Scout cookies. I helped them out by selling 22 boxes to my co-workers...and I bought 31% of said 22 box order! So, I'll be making some Thin Mint inspired goodies. In the past I've made Thin Mint Cupcakes, Thin Mint Brownies and Thin Mint Tart Crust...we'll see what else I can make!

I recently purchased the Cultured Buttermilk Blend product by Saco. Have you tried it? Can't figure out if I like it or not...I guess I need to make recipes with and without the real buttermilk and compare.

Thin Mint Pancakes
I made 1/2 the recipe for Buttermilk Pancakes that appears on the Buttermilk can! You can make any buttermilk pancake recipe and crush up some Thin Mints and add them to the batter. What can be better?! Um, nothing. :) Happy Pancake Day!

Buttermilk Pancakes
4 T (1/4 cup) Saco dried buttermilk blend
1 c flour
1 T sugar
1 t baking powder
1/2 t baking soda
1/4 t salt
1 egg
1 cup water
2 T vegetable oil
10 Girl Scouts Thin Mint cookies, crushed or cut into small pieces

Mix together the dry ingredients, including Thin Mints, in a bowl. Mix together the egg, water and oil in a measuring cup. Mix together just until mixture is smooth; don't overmix. Drop onto a hot, greased pan and cook until the top is full of tiny bubbles. Turn and brown other side.

NPR has a collection of "Driveway Moments" - those stories so compelling you find yourself sitting in the car to catch the end of the piece. I have often found myself in that situation, along with "Cry on the Freeway Moment" (damn you, Storycorp).

Today, I had a NPR Baking Moment.

All Things Considered had a story about Girl Scout cookies and how you can bake & cook with them. Samoas Fried Shrimp, anyone? See here for the story and taste test. By the way, I have new respect for host Michele Norris because she too hates coconut :)

The Girl Scout website has Thin Mint Brownies, but they use a boxed brownie mix. I made the brownies from scratch and added Girl Scout Thin Mints.

I think it is appropriate to make Brownies with Thin Mints because that was my maximum level of participation. I never made it Girl Scouts...so I'll be a Brownie forever. ;)

I took Everyday Food's (Martha Stewart empire) Chocolate Chip Brownies recipe, deleted the chocolate chips, and added a sleeve of Thin Mints. It is triple chocolate: melted bittersweet chocolate, cocoa powder and the Thin Mints!

Recipe:
Girl Scout Thin Mint Brownies
Adapted from Everyday Food's Chocolate Chip Brownies recipe

Printable recipe here

1 cup all-purpose flour, spooned and leveled
1/4 cup unsweetened cocoa powder (I used Scharffenberger Natural cocoa powder)
1/2 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into pieces
8 ounces semisweet or bittersweet chocolate, chopped (I used bittersweet chocolate)
1 1/4 cups sugar
3 large eggs
1 sleeve Girl Scout Thin Mint cookies, chopped. (Okay, Thin Mints keep shrinking to keep the price at $4 a box. So, it is 3 1/2 ounces of Thin Mints or 16 cookies)

1. Preheat oven to 350 degrees. Line 9 x 9 square pan with parchment paper and butter or spray with Pam with flour (that's my method). In a small bowl, whisk flour, cocoa, baking powder, and salt; set aside.

2. Place butter and semi-sweet or bittersweet chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth. Remove bowl from heat. Add sugar; mix to combine. Add eggs one at a time, and mix to combine. Add flour mixture; mix just until moistened (do not overmix). Fold in chopped Girl Scout Thin Mints. Transfer batter to prepared pan; smooth top.

3. Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 40-50 minutes. (Be sure to check them early. The recipe says "50-60 minutes" but I checked mine at 50 minutes and they were way done). Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into squares.
